Lime Coriander and Chilli Marinade

As the end of summer approaches, I’m always mindful of how much I love summer food and how much I miss them during winter. Don’t get me wrong, winter food is great too,  roasts, cottage pies, slow cooked everything, yum! Summer food just has a freshness to it that winter can’t beat. 

My idea was to create a simple and easy marinade for chicken that packs a punch when it comes to taste. The flavours i’ve chosen are throughout Mexican and Thai food, which is probably why I love those so much. You could easily use this recipe on other meats too.

Coriander Chilli and Lime Chicken

// What You’ll Need (for two)

  • 350-400 grams of chicken breast, skinless
  • Juice of 2 limes
  • 1-2 chilli’s (depending on how spicy you want it)
  • Big bunch of coriander, ends chopped off

// Method

  1. Cut chicken into large slices and place in a medium sized bowl.
  2. Chop all coriander and chilli into small pieces, roughly is fine as i’m all about easy cooking (see above picture). I deseeded my chilli. Place ingredients in bowl with chicken.
  3. Pour lime juice into bowl and then stir all ingredients well.
  4. Pop in the fridge, covered, to marinade for an hour.
  5. To Cook: Heat up a grill/pan with minimal oil and cook until brown / cooked through.

I really recommend a grill as it reduces cooking time, and uses almost no oil to cook meals like this. I used a George Foreman grill and a light dusting of spray oil.

Serve on a salad, or in wraps with peppered tomato and salad and some light mayonnaise or guacamole.

    1. Thanks Scott – I’d love to hear how you got on, and if you liked the flavours, and also if you used it on chicken or something else!
      I’m all about meals that pack a punch of flavour, and this one certainly does!

      1. Came out great, I really love chilli, coriander and lime as a combination. I marinated with the above ingredients like you did with the addition of some of my home brew – a high hopped american pale ale. Marinating chicken in beer is a great pleasure of mine.

        I diced the chicken and stir fried everything as I didn’t want to get out the grill in the storm we were experiencing last night.

        I served over a bed of crispy roasted potatoes and some rocket for colour.

        Sarah and I enjoyed thoroughly. Will use the same ingredients over the weekend for some chicken wings I reckon.
